In a large bowl, mix together hot sauce and melted butter. Add in the cooked shredded chicken and stir until fully coated in the sauce.
Add chopped celery and green onions to the bowl and stir to combine.
In a separate small bowl, mix together blue cheese, sour cream, mayonnaise, garlic powder, salt, and pepper to create the blue cheese dressing. (Or use regular blue cheese dressing.)
Wash and dry the head of iceberg lettuce. Carefully peel away each leaf to create a wrap.
To assemble the wraps, spoon the chicken mixture onto each lettuce leaf. Top with a drizzle of blue cheese dressing and serve immediately.
