Ingredients

  • 1 lb beef sirloin thinly sliced
  • 2 cups broccoli florets
  • 2 cups cauliflower rice
  • 1 whole bell pepper sliced
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tbsp coconut aminos
  • 1 tbsp sesame oil
  • 1 tsp ginger grated
  • salt and pepper to taste
  • sliced green onions for garnish optional

Instructions

  • Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of olive oil to the pan and swirl to coat.
  • Add the beef and cook for 2-3 minutes or until browned. Remove the beef from the pan and set aside.
  • Add the remaining tablespoon of olive oil to the pan. Add the broccoli and bell pepper and cook for 3-4 minutes, stirring occasionally.
  • Add the garlic and ginger and cook for an additional minute.
  • Add the cooked beef back to the pan with the vegetables.
  • Add the coconut aminos, sesame oil, and cauliflower rice. Stir well to combine and cook for an additional 2-3 minutes.
  • Season with salt and pepper to taste.
  • Serve hot and garnish with sliced green onions.
