Preheat your oven to 375°F (190°C).
Make a lengthwise incision in each steak, creating a pocket for the stuffing. Be careful not to cut all the way through.
In a small bowl, mix the softened cream cheese with minced garlic, dried thyme, salt, and pepper until well combined.
Stuff each steak with a quarter of the cream cheese mixture, dividing it evenly among the pockets.
Wrap a slice of bacon around each stuffed steak, securing it with toothpicks if needed.
Heat olive oil in an oven-safe skillet over medium-high heat.
Carefully place the stuffed steaks in the skillet and sear them for 2-3 minutes on each side, until the bacon begins to crisp.
Transfer the skillet to the preheated oven and bake for about 10-15 minutes, or until the steaks reach your desired level of doneness.
Remove the skillet from the oven and let the steaks rest for a few minutes.
Remove the toothpicks and garnish with fresh chopped parsley before serving.
